Weekly Menu Plan: Reruns

I’ve made a real effort for the past several weeks to make new things, and that’s been good. We’ve found some things that we like, and I have broken out of my dinner rut. I don’t feel panic in the afternoon because I have a plan, and I have a pantry and refrigerator full of things to execute the plan. However, I also have a long list of recipes that work for us. We’ve found things that we like, and there’s something comforting about making something and knowing that it’s just going to work out, the end.

I also realized as I was scouring my Pinterest boards that I was trying to make this week’s menu interesting for the sake of the blog, and while that’s fine, what’s more important is that I make this something that works for us, otherwise I’m just creating more work for myself.

What I’m saying is that I intend to keep planning out our meals, and I intend to keep posting them here, but I make no promises that each week’s menu will contain a list of entirely! new! recipes!

Onward to the menu!

Enchiladas – Nothing fancy here. I’ll make salsa chicken in the crockpot, add black beans and cheese, and roll everything up in a tortilla. I really like Trader Joe’s enchilada sauce, so we’ll use that, plus more cheese on top. I love that I can assemble these at any point during the day and then just toss them in the oven whenever we’re ready.

Turkey Burger Sliders – Just for fun.

Sweet and Sour Chicken – This recipe calls for dredging the chicken, and browning it before baking, which can be an extra annoying step. Wendy pointed out that you can just add the sauce to the chicken and bake it, which we’re going to try! I’ve done the dredging part before, and it’s YUMMY, but messy.

Sweet Sticky Baked Chicken Drumsticks with Chinese Chicken Salad Too much chicken? I don’t know, but for some reason this combo sounds delicious to me.

We’ll be finishing off these Cookie Butter Oatmeal Chocolate Chip cookies this week, too. And by “this week” I mean “today” because we powered through an impressive number of cookies this weekend. They’re so, SO good. Despite their name, they aren’t too sweet, and there’s exactly the right amount of salt. Make them immediately.

    HA! You’re funny!
    Let me know how those Sweet Sticky Baked Chicken Drumsticks turn out. I had them on two menus but axed them each time.
    BTW, I totally considered buying some Cookie Butter today at TJ’s. SO TEMPTED TO MAKE THOSE COOKIES!!
